Cabbage was one of the first plants ever to be cultivated and the ancient Egyptians worshipped cabbage heads as gods. You know, as people tend to do with vegetables. Those crazy Egyptians. Did you know that they fed their workers beer when they were building the pyramids? No wonder they made them so big - and so many! Man, it seems like you can't stumble through the desert without running into a pyramid somewhere. Anyways, Cabbage is high in anti-carcinogenic phytochemicals and it stimulates the immune system's production of antibodies.

General information
Storage Tip: Store whole in perforated plastic in crisper.

Preparation Tip: Remove damaged or discoloured leaves. Cut out tough core at base. Be careful not to overcook.

Did you know... Adding bread into a steamer of cabbage will absorb the sulphurous odour.

Health Information: One cup chopped raw green cabbage contains only 22 calories and is high in vitamin C. Red cabbage contains twice as much vitamin C as green. High in vitamins A and E and selenium, iron, folate and potassium.

Covert Farms is flourishing under the care of Diana, Gene and Shelly Covert; producing over 60 crops on 128 acres in certified organic production. Their main production is of tomatoes, potatoes, onions, corn, grapes, and melons. They're promponents of biodynamic methods, and look forward to operating the entire farm under biodynamic principles.

The farm has been in the family for three generations; having been founded by George Covert in 1959. In 2010 these farmers were awarded the BC Outstanding Young Farmer Award. They work to promote organics in their community thru events like the "Festival of the Tomato" and the Young Organic Farmers Summer Camp.

Wine lovers take note; they've also partnered up with Kirby & Crystal Froese to operate the Dunham and Froese Estate Winery. They are a small production winery and are completely hands on from vineyard to bottle. They are leaders in organic and Biodynamic methods both in the vineyard and in the winery.
