Good ol' liver. It gets a bad name, but once you try it done right? It's addictive. It's full of not just iron, but so much b-12 and vitamin a that your head will spin. But what do you do with it? You could go with a classic: Slice the liver up and let sit in some milk for an hour or two. Meanwhile, slice some nice onions into rings and saute them in butter until soft. Remove the onions, coat the liver in some seasoned flour and cook one side until it's nice and brown. Flip them, throw the onions back in and cook to taste. Or you can go with my favorite: Cook some bacon until crispy and set aside while reserving the grease. Add a small chopped onion and cook for a couple minutes before adding some garlic. Add the liver and some herbs and cook 3-5 minutes on each side (until no longer pink inside). Take all of this and put it in a blender with a half cup of melted coconut oil. Blend that together and then mix up chunks of your crispy bacon into it. Let it sit in a bowl or some other mold and then serve up the best darn pate you've ever had!
