About the product
Burdock (or Gobo) root is long and slender, growing up to three feet in length. Its course thin skin is the color of earth and its flesh, a crisp off-white contrast. The root is sweet, mild and earthy. It has anti-inflammatory, antioxidant, and antibacterial properties.

Burdock is a traditional Asian ingredient often found in stews, stir fries, and braised dishes. It's starchy qualities also lend themselves well to frying. It has a nutty flavour that makes for a great simple side dish, when sliced thin then simmered slowly in a flavourful cooking liquid.

West Coast, BC sources produce from certified organic growers whenever possible and from as close to home as possible. The current growing season means that best of these items are grown locally right now, in and around the Lower Mainland of BC.

Most of these farms will be right around the Fraser River, from Delta out to Chilliwack, but some also come from the Pemberton area. This means the farms these items are sourced from are located within the SPUD Vancouver delivery area. We like to let you know which farm it comes from whenever we can but, due to weather conditions and general availability, this week's selection is coming from multiple farms in the Lower Mainland.
